February – Trifle Terrine
My sister’s decided to up the game this month with a very labour intensive challenge of a trifle terrine, this is another recipe from 2017’s GBBO, this time from Sophie and boy was it a challenge.
It took me just under 5 hours, yes 5 HOURS to make this dessert. That does include chill times etc but oh my I can’t even begin to explain how much my body ached. It was exhausting lets just say that and I have no idea how they coped in the tent.
It was a challenging dessert mainly because of all of the different elements involved. I had to make sponge, jelly, custard, white chocolate bavarois and raspberry mousse. I have made some elements separately before but I haven’t used leaf gelatine before and compiled all of the elements together to make one full dessert.
I had to freeze some of the layers as I was running out of time and I also couldn’t find Yuzo so I used limoncello instead. It worked well still which as nice as I wasn’t sure what to expect but the flavours worked well together and I thought it tasted good which is rare from me. Just you only needed a very small slice, which is why it was great that I took it to my cousins birthday party, more people to enjoy.
It did look awesome once completed and people did say it tasted good which is a result especially as it took forever to make. Like I told all of my family, I am afraid it won’t be something I will be making again, but it was nice to experience making something new.
One thing I will say is that I would ensure my clingfilm is straighter next time. It looked slightly weird out of the container which wasn’t appetising from the side. Images below.
As per last month – here is some feedback from the bake from my sisters and Dan.
Charlotte was unable to comment on the dish this month as she was away when I made the bake. My family all tasted it in her place and it received a thumbs up. Although always wary that my family are being too nice.
A very complex dessert that was incredibly tasty. You only needed a little as it was full of flavour. Beautiful layers and each one tasted incredible (Yes, I did taste them individually and together, because why wouldn’t you?) Overall finish could have been slightly better.
Dan – 7/10
It was very nice babe, but the bottom layer of cake was a bit weird as there wasn’t a lot of it.
