Ok I won’t lie to you here, I thought oh well I haven’t baked that much this will be a short post. Good job I like to take pictures of everything I bake because it turns out I baked 4 things in May. Not a lot granted, but more than I thought.
You may have spotted in my May reads that I read a Lucy Diamond book (The Secret of Happiness) and I made a recipe from the back of the book.
Basically, I made pancakes, and because I didn’t have much in the house I had it with yogurt and grapes. Yes an odd combination but one which was really nice to eat if I am honest.
So a little back story, but in May my uncle was ill and in hospital. So to cheer him up I made him his favourite cakes. This was a lemon drizzle and a fruit cake. Although, I kind of ended up making a fruit loaf. Because well I had one of those moments when you only focus on one element of the cake (fruit) and just went with a recipe I had made in the past.

As above. I made this for my uncle. I have to say though, it was a large batch so I actually made two cakes. This was helpful as I ended up splitting it up.
I made these because, half way through making the fruit loaf I realised my error so thought I would make some cupcakes to make my uncle happy. Yes it was a busy night in the kitchen. Also just want to flag that my uncle is not the type of person who needed all three, I was just trying to cheer him up with some slices of cake.
Victoria Sponge – Royal Wedding
Basically, I really wanted to make a cake for the Royal Wedding. I thought that I would make a classic, with a twist. So I added fruit in the shape of the union jack on the top for good measure. If I do say so myself, it went well with the days celebrations.
So thats it for May, will be back shortly for June bakes and then shortly after July I guess…
